Elizabeth Capo, RD, LD/N

Elizabeth Capo is a Dietitian/Diabetes Educator at the Eleanor and Joseph Kosow Diabetes Treatment Center at the Diabetes Research Institute.  

Ms. Capo obtained her Bachelor of Science degree in Dietetics and Nutrition in 2004 from Florida International University. She went on to complete an Internship in Dietetics at the New York Institute of Technology, with a main focus on Medical Nutrition Therapy.    

Ms.Capo began her career as a Clinical Dietitian in an acute-care environment where she gained clinical experience and knowledge in various disease processes and their respective therapies. In addition, she worked as the nutritionist for the Bariatrics Center of Excellence at Mercy Hospital in Miami, Florida, where she provided nutrition assessment and counseling for patients requiring weight management intervention.  

Her interest in diabetes brought her to the DRI, where she is an integral part of the education team. Ms.Capo aids in the development and implementation of nutrition-specific diabetes education programs with a special focus on the needs of the Hispanic population.  

Ms. Capo is a Registered Dietitian, a Licensed Dietitian/Nutritionist, and is a member of the American Dietetic Association.
